Summer without fried anchovies for an appetizer at the ouzo or tsipouro, I cannot imagine. Flouring small fish for the frying has always bothered me but with this method I describe below is easy going. If you want them even crispier, make the mixture as I give you below.

Tip: Check off the ingredients you have used in the recipe or note the ingredients you have and add the rest to you shopping list to buy them.

 3 parts all-purpose, gluten-free flour
 1 part polenta (corn semolina)
 1 part gluten-free breadcrumbs
 salt
 a large food freezer bag or an airtight plastic container with lid (Tupper)

Place all the ingredients in the food bag or tupper and mix them.

Put in our little fishes, close the bag with enough air or the tupper with the lid and shake it well.

When we open it, our little fish will have been floured with the right amount.

Fry them in deep saucepan with hot oil. Put an ouzo on the rocks and enjoy!!!

Tips:

  • Using a food bag, you don’t have to wash it afterwards.
  • Whatever you have left over from this mixture, don’t throw it away! It will make nice cakes in the pan, which I will give you the recipe for later.
