Very easy and very classic Greek recipe for batter in general. Either with gluten or gluten free. My mother had found this recipe years ago and used it both for how easy it is with few ingredients but mostly for how tasty and crunchy it is. Even long after cooking, it remains crunchy. Enjoy it on both fish and vegetables. It only needs 2 ingredients. Flour and carbonated sparkling soda water. I did several tests and finally found with which flour I liked the most and I recommend it to you. This mix flour is rich in fibers and it is lactose and wheat free.  But you can use whatever gluten free mix flour you have.

 150 g gluten-free mix flour Semper’s Grove Mix
 1 cup carbonated sparkling soda water
 salt
 grounded pepper

Sift the flour into a bowl.

Add some salt and pepper (optional)

Pour the carbonated sparkling soda water

Mix well so that it dissolves. It becomes a thick batter.

Tips:

  • If you use other gluten-free flour that is universal, the ratio of flour to sifter is as follows: for every 1 cup of sifter, you need 220 g of gluten-free mix flour. In general, our batter should become thick. It reminds me of the batter we make for crepes.
  • Fry in hot oil until golden brown. Caution! Don’t expect it to turn pink like with conventional flour, but it will take on its color.
