My first attempt to make chocolates. I had made the Homemade Bounty and had melted chocolate left over. I also had these nice heart shaped silicone forms and decided it was about time to try to make chocolates and maybe become another Juliette Binoche as starred in the movie “Chocolate». 😀  For the filling, I used the my homemade hazelnut praline I also had in stock. They came out a hit and absolutely amazing!!!!

Here I’m giving you a basic recipe, but you can play with your imagination and fill them with whatever ingredients you like. For example, I plan to make a spoon dessert with clementines, so some of my future chocolates will have this filling.

 Couverture chocolate whatever you prefer, classic, milk, with more cocoa, etc.
 Hazelnut praline, homemade or ready-made

In a bain-marie (no special equipment is needed, just place a metal or pyrex bowl over a pot of boiling water) melt the couverture, stirring it well until our chocolate mixture is smooth. You can use whatever couverture you want. My favorite is the one with the most cocoa but usually everyone finds it bitter.

Fill the silicone cases by 1/3 with the melted couverture.

Add a little praline to the center of each case.

Fill with melted couverture until the entire case is full.

With a spatula, clean/level the surface.

Let them cool well and the couverture stabilizes and they are ready!!!
