I first heard about Apicrera Thyme Honey from a competition that I won and I was immediately thrilled by its taste. It is one of the best I have ever tasted. They are rightfully award-winning products. Other flavors followed, such as Ereikis Honey (Erica Arborea), etc. These two are my favorites!
I can’t wait to make my Gluten Free Μelomakarona – Greek Christmas Honey Cookies (see recipe here) this year with this perfect honey.
Because of this honey, I felt the need to try it in my recipes so that it would take them to another level and of course I could taste it every day. And these truffles really turned out amazing! They have no butter, no cookies, they are light and you can eat them without guilt. All the ingredients are naturally gluten-free. Also, the fact that they don’t require a mixer or special equipment makes these truffles even easier to make even by your little ones.
Tip: Check off the ingredients you have used in the recipe or note the ingredients you have and add the rest to you shopping list to buy them. - Attention: All ingredients must be checked that are Gluten-Free and without traces of gluten.

Mix the yogurt with the cocoa and honey.
Add the almond or coconut flour and mix well.
Form into 20 small balls.
Decorate with the pistachio or cocoa powder. (optional)

- You can replace the Greek yogurt with cottage cheese or cream cheese and adjust the almond or coconut flour accordingly. It is best to beat the cheese with a food processor until it becomes fluffy and homogeneous. Because the mixture with the cheese is thicker, you will need to add less almond or coconut flour.
- If you want to add a low glycemic index sweetener, you can add agave syrup. However, you may need to add less so that it does not turn out too sweet.
