Easy Gluten Free Zucchini Pie without phyllo dough

This recipe for zucchini pie is both gluten & guilt free and so easy to cook it but still very delicious!!!

 700 g zucchini*
 1 ½ cups chopped into small pieces, onions or spring onions or both
 4 eggs
 ½ cup milk
 3 tbsp parsley, chopped
 1 tbsp spearmint chopped
 3 tbsp dill chopped
 ½ tsp black pepper, grounded
 ½ tsp sweet or hot paprika
 1 tsp baking soda
 10 tbsp gluten free flour Schär's Mix B – Mix Bread
 250 g feta cheese (normal or low fat, your choice)

 3 tbsp olive oil
 2 cups gluten free breadcrumbs Schär’s Paniermehl - Breadcrumbs

Grate the zucchini on the grater, season with salt and leave them on the strainer so it will let out it’s juices.

In a small bowl add the ingredients one by one (in the order that they appear on the above list) and mix them.

Pour the mixture in a sprayed with oil and sprinkled with breadcrumbs a heat resistant glass pan (Pyrex pan) size approx. 25x35cm/ 10”x13.5” inches.

Optionally spray/sprinkle some olive oil on top. Bake at a preheated oven at 180°C / 350°F for about 40 Minutes.
