Eggless Gluten Free French Toast

Amazing eggless, vegan gluten free French toast, that will surprise you because they will remind you the traditional ones we all knew…

 8 slices of gluten-free bread, preferably stale
 4 tbsp corn flour or potato starch
 4 tbsp sugar or maple syrup or agave syrup
 ¼ tsp baking powder
 ¼ tsp salt
 1 tsp liquid vanilla
 ½ cup plant-based milk, I used almond milk
 1 tbsp sunflower oil or other oil for frying
For frying
 oil or plant-based butter for frying
For topping
 maple syrup or honey or whatever else you want for topping (optional)

Put all the ingredients together in a food processor/blender and beat them.

On a baking pan, lay the slices of bread, which should be stale. If they are fresh baked or just opened a bread packaging, I suggest to put them in the toaster for a while to be less moisture.

Pour the mixture and leave for 2-3 minutes, so that the slices of bread soak well.

Place a non-stick pan on the stove with oil or plant-based butter, over a medium-high heat.

Once the oil is hot, add the French toast and leave them to cook well and take color on one side for 2-3 minutes and turn them on the other side as well. Remove and drain on kitchen paper. Watch out because they are sticky so they maybe stick to the pan.

You can also replace the oil with 1 tsp. plant-based butter every time you put new French toast in the pan and thus make them with less fat.

The ready-made French toast last for 2-3 days outside the refrigerator, since they are vegan, no need to put them in refrigerator (room temperature need to be under 21°C/70°F.
