Gluten Free Baked Fish Fillet with Bread Crust

A very easy recipe for baked sole or cod fish fillet that both children and adults will love. Quick, easy and very tasty!

 4 sole or cod fish fillets
 6 slices of gluten-free bread such as Schär’s Pan Blanco , grated
 3 tbsp chopped parsley
 3 tbsp extra virgin olive oil
 2 cloves of garlic, chopped
 salt
 grounded pepper
 1 tbsp extra virgin olive oil for the pan/pyrex

Grease a pan or pyrex pan and lay the fish fillets on it, after first having sprinkled them with salt and pepper.

Put the parsley, garlic and oil in a food processor and chop them.

In a bowl, rub the 6 slices of gluten-free bread by hand and add the mixture of garlic, parsley and oil. Add the salt and pepper and mix them well. (you can also use a food processor)

Spread the crumb mixture over the fillets so that they are well covered.

Bake in the oven at 180°C / 350°F for about 25 minutes, until the crust is golden brown.
