Savoury Gluten Free Cake with colourful Mediterranean Vegetables

A cake, but a savoury one! And gluten free! A recipe that always succeeds! You will eat it all almost immediately! Impossible to resist!

 500 g gluten-free flour Schär's Mix C – Mix Pâtisserie
 3 tsp baking powder
 5 small eggs
 1 cup extra virgin olive oil
 200 g yogurt
 100 g kefalotiri or graviera cheese, grated
 100 g gouda cheese, grated
 100 g mozzarella cheese, grated
 100 g cold cut meats (I used a smoked one)
 2 red peppers cut into cubes
 1 cup cooked fresh or frozen assorted vegetables cut into dices (peas, corn, green beans, carrots, etc.)
 pepper
 red sweet paprika
 salt (be careful, because the cheese and the cold cuts are having a lot of salt, I usually omit salt)
 3 tbsp dry mizithra cheese or parmesan cheese, grated (optional for decoration)

Beat the eggs in a small bowl.

Add the oil and yogurt and beat them well.

Sift the flour and baking powder over this mixture and continue mixing.

Add all the remaining ingredients and mix them lightly.

Butter and flour a cake pan or 3 bread & loaf pans size 9X22cm/ 23”X56” inches.

Bake at a preheated oven at 175°C/330°F for about 50 Minutes until get a golden brown color.
