This recipe went viral on all social media and everyone’s making all over the internet and I don’t take credit for it. But I had to try it for a personal opinion.

Some called it bread, but sure doesn’t look like bread at all. However, if you are looking for a protein bread without flour that will resemble bread, I made such a recipe during our quarantine period from Covid in 2020, when we’re constantly cooking and had time for many tests. But this one is perfect for wrapping and it’s so quick that you can make it several times a week.

As I wrote above, there are many recipes doing the rounds, but I made mine with my detail touch. I added sunflower seeds which give a very nice crunchy texture, deliciousness and extra Omega3.

They are really ideal for reducing carbohydrates or increase protein from your diet, avoiding standardized/processed foods but without spending a lot of time in the kitchen and it’s not difficult at all

For me it was the perfect summer breakfast and all I added were slices of fresh tomato, a few drops of extra virgin olive oil and oregano. It really didn’t need anything else. But you can add whatever you like and enjoy it every hour of the day.

 250 g cottage cheese
 3 eggs
 salt
 red sweet paprika or pepper
 oregano
 2 tbsp sunflower seeds (optional)
 white sesame & black sesame for decoration (optional)

Abbreviations: g=grams kg= kilograms cup=250 ml tsp= teaspoon=5 ml  tbsp= tablespoon=3 tsp=15 ml ml= millilitre= (1ml=0.034 fl oz / 1fl oz=29.6 ml) l=litre/liter=1000ml

Preheat the oven to 165°C/330°F at air mode.

Put all the ingredients together, except the sunflower seeds and sesame in a food possessor and beat them until smooth.

Optionally, add the sunflower seeds and mix them with a spoon.

Line a 25X35 cm /10”X14” inches baking tray with parchment paper.

Pour the mixture, which is quite runny and spread it evenly.

Optional sprinkle the top with white and black sesame seeds.

Bake for about 30 to 35 minutes

  • You can omit sunflower seeds at all, but you can also replace them with flaxseed or chia seeds etc.
  • Every oven heats different. My new oven is slower than the old one. The time I’m giving in every recipe is approximately. Watch them as they baking and adapt the time.
