Very very easy but impressive gluten-free chocolate cake hearts without using a special mold. Ideal for parties.
This was the first recipe that I’ve made for the “Gluten Free Pink Hearts Without A Mold” (see recipe here) but they turn out quite big to put them at lollipop sticks. And also his idea came to me at Christmas when I made the Easy Gluten Free Trees for parties (see the recipe here).
Although I have and keep getting molds in shapes and designs to the point that my kitchen is full of them and I no longer have space to stock them, I thought I would save you from that.
These chocolate heart cakes are super easy to make because they are basically a chocolate cake that you just give hart shape to and they look amazing. They are perfect for parties and no one can resist. They really became a hit with my kids and my husband.
I didn’t find it necessary to cover them completely with white chocolate couverture, just on top but you can cover them all over.
Because I was in a Valentine’s mood, I made them in the shape of a heart, but with a suitable cookie cutter, you can make them in any shape you want. For example, for Christmas in the shape of a cChristmas tree or star, for Easter in the shape of a bunny, for children’s parties in the shape of various animal shapes, etc. Basically, here I show you the easy technique for making designs without buying a lot of shaped molds.

A super easy gluten-free, no-bake strawberry cake recipe that will be your basic recipe for both Valentine’s Day and birthday cakes. The only time-consuming part is cutting and arranging the strawberries. The rest is a breeze.
I brought this cake to a gluten-free group meeting and ever since I had so many messages to post the recipe immediately to my blog. I got so much happiness of the faces I saw of those who tasted this strawberry sin. Few of them even got a second piece.
This strawberry cake was disappeared at a glance. It is so light and refreshing with the fresh strawberries that you can eat 3 pieces at once. I will repeat it again in February for my mother’s birthday. I know that she will be thrilled by its delicate taste.
It doesn’t require baking because it has Savoiardi/ladyfingers and the cream consists of whipped cream and instant pastry cream. But if you have the time to make half the batch of Crème Pâtissière / Custard (Pastry Cream) (see the recipe here) you will definitely get it to another level. Here is the simplest version for those who either don’t have it with pastry or don’t have the time.

*whipped cream in a can: In Greece, we have also, this type of cream that is an ideal for making sweets such as ice creams, chilled sweets etc. It is easy to use – all you need to do is to add icing sugar or sweetened concentrated milk and beat for 5 minutes in a simple hand mixer. It contains vegetable fats and milk. One packing is 250 gr makes up approximately 750 ml of cream. The most well known in Greece are Morfat, Ermol & Jotis. It has the same texture as coconut cream as you can see at photo below. So you can use coconut cream if you are lactose intolerance.

Focaccia is a fluffy and soft Italian bread that is flat and savory and needs just herbs, olive oil and salt. You can eat it plain or as a base for a variety of toppings such as rosemary, cherry tomatoes, garlic, sage or any other ingredient you love.
Here is a very easy gluten-free, vegan recipe for Valentine’s Day & not only for that day.
The main that I’m giving you with this recipe is the decoration on top and that we carve/cut it beforehand so that it is in small pieces on your table and of course decorated according to the requirements of Valentine’s day.
But it’s not just for Valentine’s Day, it’s for every day you want to show your love to the ones you love and make each day special. We should celebrate love and romance every day and not just one day a year.
Focaccia is probably the most famous type of bread in Italy. It is thicker than 1.5cm/ 0.6” inches. I would say it is very similar to Greek Lagana, that traditionally baked for Clean Monady (for the gluten-free recipe, see here). It can be served as a bread in meals or as a sandwich bread and can have various shape: round, rectangular or square.
Focaccia did not become famous by chance. After all it is one of the tastiest breads that you can prepare without special ingredients or sophisticated equipment.
Its most representative feature is its slightly crispy crust combined with its fluffy and chewy crumb. I achieved this feature with the Italian gluten free flour Caputo’s Fioreglut.
But also with other flours that I have made, it has become a favorite of my family. There are several times I have made it with whatever flour I had leftover in the cupboard, such as: – Freee’s rice flour, – Schär’s Mix B, Bread flour, – Schär’s Mix it Farina flour, – Akis’ corn starch, – Caputo’s Fioreglut flour mix.
Pizza bianca, the focaccia of Rome that has their particularly fluffy and puffy dough, is due to the increased liquid content in the dough recipe, which also greatly favors of ours gluten-free flours. Soda water / club soda helps the dough rise tremendously and as you can tell it has become my go-to dough ingredient. Be careful that to use Soda water / club soda and not sparkling water.

A super easy gluten-free dessert that can be made in 5 minutes and only requires 1 cupcake or 4 cookies and 3 other ingredients. It is the ideal solution when people suddenly come to the house and you want to treat them or when you don’t have time or don’t want to spent much time for making dessert.
This idea came to me from the cake that was left over from the Gluten Free Pink Hearts Without A Mold (see the recipe here). We could have eaten it simply with a little icing sugar on top but after the hearts that was a hit no one wanted the simple cake and because I am one of those who believe at Zero food waste, I turned it into these amazing desserts that disappeared at a glance.
I used the homemade pomegranate liqueur (see the recipe here) that I made this year but any other liqueur will do. If you don’t want to use alcohol, you can add juice, e.g. sour cherry or some diluted syrup from a spoonful fruit sweet or even just maple syrup.
Because I had run out of homemade strawberry jam (see the recipe here) I used a ready-made one. If the ready-made jam you get is quite thick like jelly, then I suggest you dilute it with 1-2 tbsp. water and beat it a little with a fork to make it fluffy and thus mix better with the cream.

This idea came to me at Christmas when I made the Easy Gluten Free Trees for parties (see the recipe here). Although I have and keep getting molds in shapes and designs to the point that my kitchen is full of them and I no longer have space to stock them, I thought I would save you from that.
These hearts are very easy and due to the small amount of dough I made them in the food processor so to save myself of washing large utensils.
I added a little food coloring and made them pink, but you can add more and make them red.
The pink flowers that I decorated are white couverture that I colored and put in special silicone molds to make them. The truth is that I had leftover melted couverture from a dessert that I’ve made, so I colored it and put it in the molds and in the refrigerator. It is not necessary to make them, or to buy such molds. I decorated two of these hearts with grated cake and they are also impressive as you can see.

A super easy quick appetizer in bite-sized pieces that will impress any palate. These little Christmas trees are just what you need for a festive meal!
Amuse-bouche is an bite-sized appetizer. The term is French and literally means “mouth amuser”. In France, amuse-bouche is not even listed in most dictionaries, being a euphemistic hypercorrection that appeared in the 1980s on restaurant menus and used almost only there.
For me, smoked salmon is associated with the New Year’s Eve meal, waiting for the new year to come. It is not a regular meal since it is very late at night. So the appetizers amuse bouche, a variety of cheeses and cold cuts, as well the fruits accompany your wine perfectly.
This amuse bouche is made very quickly with few ingredients. If you don’t like smoked salmon, however, you can easily replace it with smoked tuna or some smoked cold cuts such as turkey or even with the left-over turkey that you had from Christmas meal.
Instead of small crackers, you can use gluten-free tortillas that you will cut with a cookie cutter into rounds or star shapes if you want them in a more festive style. Then spread them on a baking pan, sprinkle them with a little oil and salt and bake them in the oven for 3-5 minutes until crispy.
The best thing about this appetizer is that you can adjust it to what you prefer. The cream cheese can be low-fat or high-fat, with lactose or lactose free. You can replace the mayonnaise with Greek yogurt or light mayonnaise.
But keep the pomegranate to give the required acidity that the smoked salmon needs.
I use pink pepper here to give a wonderful flavor because it is very aromatic without the burn that black pepper has. However, if you like it hot, use black pepper but be freshly ground for more aromatic result.
I use a grinder with only pink pepper and a grinder that has pink, green, white and black pepper which I believe is the best combination.

Very very easy but impressive trees made from gluten-free cake with walnuts that you can easily decorate with chocolate, confectionery candies, nuts and colorful confectionery sprinkles.
It really doesn’t take much effort, but all it‘s needed a small trick. They are so impressive and are a must for parties especially children’s parties. It’s nothing else but a round shape cake cut into pieces and by putting the stick, becomes ideal to have it in hand without getting dirty, without needing extra plates and spoons. They are also made the day before so that the day of the party not to be so busy for you.
The cake I’m giving you below is a winter or rather Christmas cake because I made it during the Christmas season, when these aromas dominated my house. You can omit these spices and it will become a simple cake. Also, replace the classic chocolate with white one if you want to give a spring time style. Or you can even color the white chocolate with green so that looks like tree.

Super easy gluten-free truffles in a festive shape that will impress everyone. They are made in 10 minutes and they taste delicious.
Truffles are an easy and quick solution for dessert and are usually made with ingredients that we already have at home.
It also helps to recycle desserts that we have left over and no one eats, such as cookies, Greek Christmas Cookies – Kourabiedes , cakes, birthday cakes, tarts, tsoureki (Greek sweet bread), etc. or for some desserts that maybe you didn’t succeeded perfect as you want.
These truffles are so simple, with the chocolate corn flakes they turn into an impressive festive pine cone that will definitely impress everyone.
In my family ate them straight away and I’m going to make them for a second time and I’ll probably use my Greek Christmas Cookies – Kourabiedes (see recipe here) this time because they also have almonds in them.
