Super easy gluten-free truffles in a festive shape that will impress everyone. They are made in 10 minutes and they taste delicious.

Truffles are an easy and quick solution for dessert and are usually made with ingredients that we already have at home.

It also helps to recycle desserts that we have left over and no one eats, such as cookies, Greek Christmas Cookies – Kourabiedes , cakes, birthday cakes, tarts, tsoureki (Greek sweet bread), etc. or for some desserts that maybe you didn’t succeeded perfect as you want.

These truffles are so simple, with the chocolate corn flakes they turn into an impressive festive pine cone that will definitely impress everyone.

In my family ate them straight away and I’m going to make them for a second time and I’ll probably use my Greek Christmas Cookies – Kourabiedes (see recipe here) this time because they also have almonds in them.

 220 g gluten-free cookies
 30 g almond flour or ground almonds
 100 g melted butter
 2 tbsp sweetened concentrated milk or syrup from spoon sweet dessert (less or more depending on the type of the cookies)
 2 tbsp brandy or liqueur
 4 tbsp unsweetened cocoa powder
 ½ tsp vanilla extract (optional)
For decoration
 chocolate coated cornflakes
 icing sugar (optional)

Abbreviations: g=grams kg= kilograms cup=250 ml tsp= teaspoon=5 ml  tbsp= tablespoon=3 tsp=15 ml ml= millilitre= (1ml=0.034 fl oz / 1fl oz=29.6 ml) l=litre/liter=1000ml

In the food processor grind cookies well.

Add all the ingredients and mix well. The amount of sweetened condensed milk depends on how sweet you want them and also on how firm your dough is.

Shape them into cones and add the chocolate-coated cornflakes around them, starting from the bottom, so that it resembles a pine cone.
