The easiest way to make pilaf rice that always been successful is to make it in the oven. Rice is naturally gluten-free. But pay attention to the way it is stored and handled.

This is a recipe is especially helpful when you have a lot of guests or when you want to stay away from the kitchen for too long.

The way I show you here is also without pots & pans to wash. And this is because in the last few days in Thessaloniki we experienced an incredible suffering due to a lack of water in our homes. Specifically, in our house we did not have a drop of water for 5 days. I think the hardest thing is not having water to wash your hands and face, to wash dishes, to cook, to take a bath and the hardest thing of all was the toilet. Luckily today it came, not with much pressure yet but at least it came! I finally had a bath and I feel like a different person.

In addition to the bottles of water we took home for drinking and cooking, we also enlisted anything else that could make our lives easier, such as disposable plates, glasses and cutlery. Disposable baking utensils were also a lifesaver. Another way to save water and avoid the transmission of germs is disposable gloves (I use powder-free ones).

You can also call this recipe “Student’s rice”, due to the absence of dishes to wash and the fact that you don’t need to do anything at all to make your pilaf.

It can be made with mixed vegetables and plain. I made both types in one dish because we all don’t eat the colors.

 500 g parboiled rice
 1 ½ l water or broth
 ½ cup olive oil
 ½ tsp salt
 1 cup cooked diced mixed vegetables or frozen mixed vegetables (optional)
 black pepper, sweet or hot paprika (optional)
 vegetable/chicken/beef bouillon cube (optional)

Abbreviations: g=grams kg= kilograms cup=250 ml tsp= teaspoon=5 ml  tbsp= tablespoon=3 tsp=15 ml ml= millilitre= (1ml=0.034 fl oz / 1fl oz=29.6 ml) l=litre/liter=1000ml

Pour in the rice and the vegetables and mix so that the rice goes everywhere. (here I try to keep the vegetables on one side only).

Bake in the oven at 210°C / 410°F for about 50 to 60 minutes.

Mix it, if desired once the 30 minutes have passed.

It is ready as soon as your pilaf when no water/broth left at the pan.

Easy Gluten Free Rice Pilaf in oven
  • Parboiled yellow rice for pilaf is the safest choice for pilaf.
  • Lately I’ve been making a combination of 3 types of rice and I’m very excited about the result.
    I put 100ml of Carolina rice, 200ml of yellow rice (parboiled) and another 200ml of basmati. If I cook it in the oven it needs 1.5 liters of water/stock, while if I cook it in the pot it needs 1 liter and 200 ml. The pilaf becomes very tasty and I highly recommend it.
  • You can add  canned or frozen mushrooms, corn, etc
  • As you can see in the photos, I kept the vegetables to one side only because not everyone wants them.
