Cheesecake is one of my favorite desserts. The truth is that I get quite tired of waiting in the fridge for the dessert to cool and set.

But with these perfect soft cookies Soft Cookie White Chocolate & Berry & Soft Cookie Double Chocolate by Schär, you don’t need to grind them, or add extra butter.

You just beat the cottage cheese with icing sugar and in approximately 3 minutes your dessert is ready to serve. The amount of sugar depends on each palate and how sweet you want the dessert. Personally, I would put less sugar in the white soft cookies. As for the jam, I had my homemade one that I made with cherries and less sugar.

Each package contains 6 cookies and so the quantity I give you below is for 6 servings.

Because it does not have extra butter and the cottage cheese has little fat, the dessert becomes a little lighter, but because of the sugar, it has calories as any other dessert. I roughly estimated about 250 calories per serving.

 6 Schär’s Soft Cookies, either White Chocolate & Berry or Double Chocolate or both
 200 g cottage cheese
 30 g icing sugar
 vanilla (optional)
 6 tbsp cherry jam or whatever flavour you like, preferably homemade

  • I really couldn’t tell which are the best Schär’s soft cookies for thiss recipe. White Chocolate & Blackberry Soft Cookie or Soft Cookie Double Chocolate I liked both cookies by Schär: Soft Cookie White Chocolate & Berry & Soft Cookie Double Chocolate. One thing is for sure, they turned out to be AMAZING dessert that I treated my guests when suddenly came at my beach house.
  • I say vanilla optional but it gives a very nice aroma to the cream and you can use powder vanilla like me or seeds from half stick of vanilla. I wouldn’t suggest vanilla sugar because it won’t melt.
  • The jam I put it was my homemade one that I made with cherries and less sugar.
