After so many sweet and delicious meals that we had during the holidays, you may have already started thinking about going to the beach in summer and how we will fit in our swimsuit. True, isn’t it? Sweets, i.e. sugar, is very addictive and some of us find it a bit difficult to give it up, craving for sweets every day. But we no longer have an excuse to eat them, since the holidays are over!
But here I have the perfect solution for you!!! A sweet, relatively “innocent”, when consumed “responsibly” 😊. This sweet salami is the ideal solution for those who want an healthier sweet since it does not contain extra sugar or extra fat. It is also the perfect breakfast that will give you incredible energy to deal with the day ahead. You can, of course, enrich it with a bit of sin… pieces of couverture chocolate. Anyway, I made the lighter version (without the chocolate) and enjoyed it without regrets!

Put the dates in a bowl of hot water and leave them for 10 minutes.
We do the same for the cranberries, so that they get some moisture and be soften.
Drain the dates and grind them in the food processor.
Then we grind the cranberries after we have drained them too.
Place them together in a bowl. Add the rest of the ingredients.
Mix them very well.
Put it on a parchment paper and roll it up so that it looks like salami.
When it is time to serve it, sprinkle it with icing sugar or coconut chips and cut it into slices.

- In addition to cranberries, you can use raisins, dried figs or any other dried fruit you like.
- Make sure the nuts are salt-free. You can lightly grind them too if you like. I prefer them whole.
- A good idea is to cut it into slices, sprinkle them with sesame seeds and thus have an energy bar for school or the office.
Good Luck and Bon Appétit!!!
