Revised recipe – October 2024

“An apple a day keeps the doctor away” is a common English-language proverb that appeared in the 19th century, advocating for the consumption of apples, and by extension, “if one eats healthy foods, one will remain in good health and will not need to see the doctor often”

But it didn’t say anything about apple pie…

As a child, I have eaten most and different apple pies at my aunt’s, who cooks amazingly… now that I think about it, I have to convince her to learn to cook gluten-free as well.

When I first made this recipe it was April and I wrote:

Sometimes we have apples at home, that are not perfect to eat them or we fed up with this fruit. So in order not to throw them away, we make the following apple pie. Or we buy apples to make this specific apple pie for our tea time.

For the pan/apples
 3 apples
 ¼ cup light brown sugar
 ½ orange the juice only or juice of a whole lemon
 ¼ cup light brown sugar
For the cake
 3 eggs
 ¼ cup light brown sugar
 1 cup gluten-free self-rising flour (~160-180g) *see tips for replacement
 1 cup milk
 1 tsp vanilla extract
 ½ tsp grounded cinnamon
 orange zest (optional)

Abbreviations: g=grams kg= kilograms cup=250 ml tsp= teaspoon=5 ml  tbsp= tablespoon=3 tsp=15 ml ml= millilitre= (1ml=0.034 fl oz / 1fl oz=29.6 ml) l=litre/liter=1000ml

Preheat the oven to 180°C/350°F.

Butter a round pan approx. Ø28cm/11” inches and sprinkle it with some sugar from the one that is for pan/apples.

Cut the apples in to slices, and lay them on the pan and sprinkle them with the orange juice and the rest of the sugar that is for pan.

Bake for about 15 Minutes

In a bowl, beat the eggs with the sugar until they become a uniform mixture.

Then add the rest of the ingredients and mix them.

Pour the mixture into the pan with the apples.

Bake at 180°C/350°F for about 35 Minutes

Easy Gluten Free Apple Pie

  • If you don’t have gluten-free self-rising flour, then use gluten-free pastry flour and add 1 tsp. baking powder.
  • Use whatever kind of apples you like. I put 3 kinds, red Starking, pink Fuji and Green Granny Smith. As you can see, it is done with all kinds of apples.
  • I used to peel them, but now I like them to have their skin.
  • Every oven heats different. My new oven is slower than the old one. The time I’m giving in every recipe is approximately. Watch them as they baking and adapt the time.
