“An apple a day keeps the doctor away” is a common English-language proverb that appeared in the 19th century, advocating for the consumption of apples, and by extension, “if one eats healthy foods, one will remain in good health and will not need to see the doctor often.”
But it didn’t say anything about apple pie…
As a child, I have eaten most and different apple pies at my aunt’s, who cooks amazingly… now that I think about it, I have to convince her to learn to cook gluten-free as well.
Sometimes we have apples at home, that are not perfect to eat them or we are tired to them as a fruit. So in order not to throw them away, we make the following apple pie.
Or we buy apples to make this specific apple pie for our tea time.
- 3-4 apples
- 3 eggs
- 1 cup sugar (preferably brown)
- 1 cup gluten-free self-raising flour
- 1 cup milk
- 1 tbsp. vanilla extract (or extract from 1/2 of stick or whatever vanilla you want, about twice the amount that goes into the cake)
- 1 tbsp oil
- 1/2 orange the juice & zest (optional)
- 1/2 tsp cinnamon.
- Preheat the oven to 180°C.
- Butter the pan and sprinkle it with sugar.
- Cut the apples in to slices, and lay them on the pan and sprinkle them with the juice of half an orange to prevent them from browning.
- In a bowl, beat the eggs with the sugar until they become a uniform mixture.
- Then add the rest of the ingredients and mix lightly.
- Pour the mixture into the pan and bake at 180°C for 30-40 minutes!
Depending on the quality of the apple and how fresh and juicy they are and also depending on how you slice them, thin or thick, makes them to rise to the surface or stay down during baking. So, if they rise up you serve the apple pie as it is. But if the slices stayed down, upside down the apple pie, after baking.
